Easy to make, this is delicious served with a side dish of spaetzel or noodles. Jensen's meat department will gladly prepare the pork cutlets so they are ready for your recipe!&lt;br/&gt;&lt;br/&gt;RECIPE&lt;br/&gt;Jensen’s Authentic Pork Schnitzel&lt;br/&gt;&lt;br/&gt;4 pork cutlets for schnitzel&lt;br/&gt;1 1/2 cups all-purpose flour&lt;br/&gt;Kosher salt and freshly ground black pepper&lt;br/&gt;2 large eggs&lt;br/&gt;1/2 cup milk&lt;br/&gt;4 cups plain dried bread crumbs&lt;br/&gt;2 tablespoons extra-virgin olive oil&lt;br/&gt;2 tablespoons butter&lt;br/&gt;1 sprig thyme&lt;br/&gt;Lemon wedges&lt;br/&gt;&lt;br/&gt;Put the flour in a shallow dish and season with salt and pepper. Whisk the eggs and milk in another shallow dish and season with salt and pepper. Put the breadcrumbs in a third dish and again season with salt and pepper. &lt;br/&gt;&lt;br/&gt;Lightly dredge each piece of pork in flour, then in the egg and finally into the breadcrumbs, pressing the bread crumbs onto the pork gently so they have a nice even coating.&lt;br/&gt;&lt;br/&gt;Lay the breaded pork cutlets in a single layer on a plate lined with parchment and refrigerate, uncovered, for 10 to 12 minutes to allow the coating to dry out a little and adhere to the pork.&lt;br/&gt;&lt;br/&gt;Heat oil and butter in large nonstick skillet over medium-high heat. Add the thyme sprig and let it fry for about 1 minute to infuse the oil. Remove the thyme sprig and reserve. Gently lay the cutlets into the pan and cook until golden brown and crispy, about 3 minutes per side. Remove to paper towels to drain. Season with salt and transfer to a serving platter while still hot. &lt;br/&gt;&lt;br/&gt;Garnish with lemon wedges and the fried thyme sprig before serving. &lt;br/&gt;&lt;br/&gt;Serves 4.&lt;br/&gt;&lt;br/&gt;— Jensen’s Finest Foods, Wrightwood</description>

The council meets on the first Wednesday of each month.&lt;br/&gt;I was told that this recipe comes from the monks at St. Andrew’s Abbey in Valyermo. It’s delicious! Members of the council will be selling their pumpkin bread after the noon masses this month.&lt;br/&gt;Our Lady of the Snows is located at 975 Lark Road in Wrightwood. Call 760-868-4342 for more information.&lt;br/&gt;RECIPE&lt;br/&gt;St. Andrew’s Abbey Pumpkin Bread Recipe&lt;br/&gt;&lt;br/&gt;4 ½ cups sugar&lt;br/&gt;1 ½ cups vegetable oil&lt;br/&gt;6 unbeaten eggs&lt;br/&gt;2 ¼ teaspoons salt&lt;br/&gt;1 ½ teaspoons cinnamon&lt;br/&gt;1 ½ teaspoons nutmeg&lt;br/&gt;3 teaspoons baking soda&lt;br/&gt;3 cups pumpkin puree, or 2 (15 oz.) cans&lt;br/&gt;5 cups all purpose flour&lt;br/&gt;1 cup water&lt;br/&gt;&lt;br/&gt;1. Preheat oven to 350 F.&lt;br/&gt;&lt;br/&gt;2. Grease five small loaf pans with cooking spray or butter.&lt;br/&gt;&lt;br/&gt;3. In a large mixer, cream the sugar and oil together. Next add the 6 eggs, one at a time, mixing. Finally, add the rest of the ingredients and stir until incorporated. Pour batter into the five small loaf pans.&lt;br/&gt;&lt;br/&gt;	1.	Bake about 1 hour and 15 minutes, or until top browns and cracks. Test with a toothpick for doneness. Several satellite passes will be pointed out to those in attendance, along with many of the familiar constellations and stars. Several bright satellites will also be visible, along with the asteroid Hebe. The moon will be especially well placed for extended viewing of its craters and mountains. Several telescopes will be available for use. Be sure to bring along warm clothing, binoculars and flashlights. &lt;br/&gt;A special video of asteroid discoveries will be shown during the event. If it's heavily overcast or raining, the event will be canceled.&lt;br/&gt;Park in the west parking lot as you enter, and walk around the back of the church to the viewing area where all the telescopes and slide show will be held.  Access to restrooms will be available in the church itself, located just off the viewing area.&lt;br/&gt;The event is sponsored by Jim and Karen Young of Wrightwood and the High Desert Astronomical Society.</description>

Did you know that many of the apple trees found around the streets of Lark, Apple, Mountain View and Pine, are actually remnants of the Wright family’s original apple orchards? These apples happen to make a very delicious pie as well. Following is one of our favorite apple pie recipes.&lt;br/&gt;&lt;br/&gt;RECIPE&lt;br/&gt;Wrightwood Apple Pie&lt;br/&gt;6 cups sliced apples&lt;br/&gt;¾ cup sugar&lt;br/&gt;2 teaspoons cinnamon&lt;br/&gt;1 dash nutmeg&lt;br/&gt;2 tablespoons flour&lt;br/&gt;2 tablespoons butter&lt;br/&gt;&lt;br/&gt;CRUST&lt;br/&gt;3 cups flour&lt;br/&gt;1 ½ cups shortening&lt;br/&gt;1 egg, beaten well&lt;br/&gt;5 tablespoons cold water&lt;br/&gt;1 tablespoon vinegar&lt;br/&gt;1 teaspoon salt&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;1. Mix all ingredients together. Dot butter on top before putting top layer of crust on.   2. (Optional: Sprinkle with sugar and cinnamon.) Don’t forget to cut slits on crust before baking! Bake at 400 F for 50 minutes or until done.  3. Pie Crust: Cut shortening into flour thoroughly. Mix rest of the ingredients in.
